Skiing with a Valero

Hi.

I am interested in purchasing a 1985 Valero with a V6 200GT Johnson currently using a 26 prop.  I was wondering if this boat with a different prop could be used for family water-skiing on weekends (& speed on other days with the existing prop!).  What do you recommend?
